Gluten Free Shrimp Mac and Cheese Recipe (2024)

I am a fan of mac and cheese – big, big fan! It is the ultimate comfort food in my humble opinion. And one of my favorite entertaining strategies is to serve my guests comfort food at parties. It is unexpected and always welcomed.

Of course there is nothing at all wrong with plain old mac and cheese. However I recently decided to make some fancy schmancy mac and cheese. I thought about adding lobster but really, hasn’t that been done already?

OK, maybe the fact that lobster mac and cheese has been done (and done and done…) is not the reason I went a different way. Honestly, getting the meat out of lobsters is just a bit too much work when entertaining a crowd. Also, lobster can be pretty pricey. So, I opted for shrimp instead – readily available, budget friendly, and if you buy it already peeled and deveined, easy peasy!

To complement the subtle sweet flavor of the shrimp I decided to try using some tangy goat cheese. Pretty perfect if I do say so myself! And the method for this sophisticated mac and cheese couldn’t be easier; I simply boiled some half and half with some herbs and garlic until it reduced by half, stirred in my shrimp, goat cheese, and cooked gluten free elbow macaroni (I used Pastariso organic brown rice). Honestly, the resulting mixture was so creamy and delish you could eat it just like that but I decided that a little crunch was in order so I topped the mixture with some gluten free bread crumbs. Parmesan cheese (you can never have too much cheese in mac and cheese!) and a little melted butter.

I like to serve mac and cheese in little one-cup ramekins (you can get some at Target for under $2.00 a piece) and then each person gets the exact perfect ratio of creamy and crunchy. But if you haven’t got a bunch of individual ramekins sitting around, a larger one will do just fine.

By the way, I doubled this recipe and made 12 individual ramekins, perfect for a party! Next time you are in the mood for some fancied up comfort, give this Gluten Free Shrimp Mac and Cheese recipe a try!

Ingredients

  • Gluten free non-stick cooking spray or butter for preparing the ramekins
  • Kosher or fine sea salt
  • 8 ounces gluten free elbow macaroni
  • 2 cups half and half
  • 2 small sprigs fresh rosemary
  • 2 small sprigs fresh thyme
  • 2 cloves garlic minced or grated
  • ¾ pound medium shrimp peeled and deveined
  • 4 ounces goat cheese crumbled
  • Freshly ground black pepper
  • ¼ cup gluten free bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon unsalted butter melted

Instructions

  • Preheat oven to 450 degrees. Spray six 1 cup ramekins with cooking spray or grease with butter. (Alternatively you can use one 6 cup baking dish.)

  • Bring a large pot of heavily salted water to a boil and cook the elbow macaroni according to the package directions. Drain and rinse with hot water.

  • Combine the half and half, rosemary, thyme, and garlic in a deep saucepan (larger than you think you will need) and bring to a boil. Continue to boil until the mixture has reduced by half, about 6 minutes. Strain the mixture and return to the pot. With the heat on medium, add the goat cheese to the half and half mixture and cook, stirring, until all the cheese has melted and the mixture is creamy. Add the shrimp and drained pasta, cook for about 1 minute or until the shrimp just begins to turn pink. Divide the mixture among the prepared ramekins.

  • Combine the bread crumbs, Parmesan cheese, and melted butter and mix well. Sprinkle the mixture on top of the mac and cheese. Bake for 10 minutes or until the bread crumbs are golden brown.

FAQs

What kind of cheese goes best with shrimp? ›

Consider the texture of the cheese: Soft and creamy cheeses, such as brie and camembert, pair well with delicate seafood like scallops and shrimp, while harder cheeses like cheddar and gouda go well with firmer fish like salmon and tuna.

What does adding more milk to mac and cheese do? ›

Sauce too thick? Stir in a splash of milk and mix until the sauce has loosened up. (This is also a great trick for reheating mac and cheese - if you're microwaving leftovers and the sauce seems to have dried up, stir a splash of milk or half-and-half into the pasta to bring the sauce back to life!)

Why add flour to mac and cheese? ›

Both the flour and the cheese help thicken the sauce.

Why is evaporated milk better for mac and cheese? ›

Evaporated milk is a highly concentrated source of milk protein micelles—bundles of proteins that can act as powerful emulsifying agents—which help to keep the sauce creamy and smooth.

Is regular milk or evaporated milk better for mac and cheese? ›

Any milk is fine. I usually use whole milk, then add some cream, sometimes, just to make it richer. Then you add the cheese of your choice, and melt that, then put the cooked macaroni in. If you are used to using evaporated milk, it's because it makes the sauce a little creamier/richer.

Is it better to use milk or heavy cream for mac and cheese? ›

Heavy cream is, in my opinion, the best milk substitute for kraft mac and cheese. It's thicker and more luxurious than milk, so I actually think this makes a better end result! just add the heavy whipping cream in the same way you would add the milk.

What happens if you use water instead of milk in mac and cheese? ›

Water actually works perfectly well as a milk substitute in mac and cheese. It adds all the liquid you need, though it doesn't have the creaminess or flavor that other substitutes add. However, if you add a little pasta water, instead of plain tap water, to your cheese sauce, you might get better results.

How to keep mac and cheese creamy? ›

Add more milk if you haven't already. More milk leads to less dry mac and cheese. If that doesn't work and you've already tried, use a different type of cheese. Velveeta works well.

What 2 cheeses are best for mac and cheese? ›

For a mac and cheese recipe, consider the combination of sharper cheddar cheeses and a flavorful Parmesan. This cheese adds a boost of fruity, nutty notes to your favorite macaroni recipes.

What meat goes best in mac and cheese? ›

1/2 to 1 cup cooked crumbled sausages, from pork to turkey to chicken (or try a vegetarian “sausage”). 1/4 to 1/2 cup cooked crumbled bacon, speck, or pancetta (watch the addition of salt if you add one of these salty cured or smoked meats).

What cheeses work best for mac and cheese? ›

Gruyere is a classic addition because it melts much like Cheddar, but has a lovely nutty flavor. Other classics include Gouda, Muenster, Parmesan, fontina, Havarti and Monterey Jack. Brie works well too, just make sure you remove the rind before mixing it in.

Can you eat cheese and shrimp together? ›

Since popular favorites like crab, shrimp and lobster already have a rich, buttery taste, they pair well with heavier types of dairy, like cream sauces. That's why a dish like lobster macaroni and cheese is so decadent or why shrimp scampi needs to be topped with freshly grated parmesan.

Does shrimp taste good with cheese? ›

GARLIC SHRIMP MAC AND CHEESE – A DREAM COMBO!

This is a magical combination. It's basically a mash up of two firm favourites – Garlic Shrimp (prawns!) and Mac and Cheese. Put these together into one bubbling pot, and you've something so incredibly tasty, you may never be able to go back to plain Mac and Cheese again.

Can you mix shrimp and cheese? ›

Meanwhile, mild, creamy mozzarella is not only perfect when melted on top of a jumbo shrimp parmesan, but its soft texture is also fantastic when chopped up with diced tomato and tossed with citrus-marinated seafood for a main course salad.
