One Bowl Apple Butter Cake Recipe | Dessert for Two (1)
One Bowl Apple Butter Cake Recipe: I partnered with ALDI to bring you this delicious apple butter cake. Read on for my thoughts visiting their store since their big remodel!

I’m not sure why we haven’t ventured into snack cake land here on Dessert for Two before. Sure, we have tons of small cakes for two made in a 6” pan (and a small carrot cake made in a 8” pan), but those cakes are really too fancy to be called a ‘snack cake.’

A snack cake is something that you can easily make (usually doesn’t require frosting, or if it does, the recipe is super simple), and is perfectly acceptable to eat any time of day—breakfast, snack, or dessert.

Snack cakes are quick to make and often only require one bowl.

A snack cake is to regular cake like leggings are to jeans—both are perfectly acceptable pants, but one is more comfy than the other. One is decidedly less fussy and more inviting. Do the snack cake. Do the leggings. Love yourself already.

I partnered with ALDI for this recipe, and they asked if I would visit one of their newly remodeled stores and share my thoughts on it. Since I am a grocery store aficionado, I quickly said yes. And you guys—the ALDI store blew me away. I was absolutely floored by the number of organic products, and the array of healthy items that can be much pricier at other stores (flax seeds, chia seeds, almonds quinoa, just to name a few). And the new store lay-out is beautiful and just made sense to me. My shopping trip was quick and efficient (except for the multiple times I got drawn in by all the good deals, hah)! ALDI is my new go-to store!

I quickly walked to the baking aisle first (it’s my barometer for grocery stores, of course), and I stocked up on everything…and I mean absolutely everything! Flour, sugars, vanilla, chocolate chips, condensed milk, spices and apple butter (a HUGE jar!). My baking pantry was low before this trip, but now?—it’s overflowing. But that’s fine because the baking season is here, hooray!

I stumbled upon SimpleNature Organic Cage Free Brown Eggs in the cold case (a 2017 Best New Product Award winner*) and grabbed a few cartons so we could really get this baking show on the road. I was so happy to find organic cage-free eggs at such a great price! I won’t confess to how many dozen eggs I bought…(5, okay, FIVE dozen eggs. I mean, I do go through a lot of eggs scaling down recipes over here).

At the time, I didn’t quite know that I would be baking you a one bowl apple butter cake recipe with those eggs, but I’m super happy with the way this one turned out. It uses just an egg yolk, but as you know—you can head over to check out all of my recipes that use an egg white anytime you have a leftover egg white. And I also have a section for leftover egg yolks, just in case.

Ok, we’ve talked a lot but haven’t talked about this cake. It’s soft, apple-y, and full of fall spices. The only thing better than a bite of this soft spice cake is any bite you get with the apple butter swirl. The jam thickens a bit in the oven and gets even jammier and richer. I’m calling it: this is the cake to make for Fall!

This cake is baked in a 9” bread loaf pan to get 4 small slices of cake. Enjoy!

FAQs

How to tell when apple butter is thick enough? ›

If it's the consistency of applesauce, no ma'am! To check for doneness: Spoon out some of the apple butter, turn the spoon upside down. The apple butter should cling to the spoon without falling off right away. If it does fall off, continue cooking to remove more of the liquid.

Can I use apple butter instead of applesauce in baking? ›

But the apple butter has a more concentrated, rich flavor. It works wonders in a cake, especially compared to applesauce. Sure, applesauce is great and delivers a lot of moisture to baked goods, but it rarely brings tons of fall, apple flavor. That's why apple butter is here to save the day!

Do you need to refrigerate apple butter? ›

Average shelf life unopened is 11 months. But after you open a jar, it is very important it is re-capped and refrigerated. It will last about a month in the refrigerator, but we usually finish out a jar in a couple of days. The same goes for any baked goods or cooked items made with apple butter.

What's the difference between apple butter and applesauce? ›

The only difference is that apple butter is milled, pureed, or finely chopped and then cooked for a longer period of time, which gets out more water and allows it to caramelize.

Does homemade apple butter thicken as it cools? ›

To thicken your apple butter after puréeing, continue to cook it uncovered, stirring occasionally, in the slow cooker until it's reached your desired consistency. This apple butter will continue to thicken as it cools.

How do I get my apple butter to thicken up? ›

If you want the apple butter thicker, you can continue to cook it on low with the lid of the slow cooker slightly ajar so that steam can escape. Allow the mixture to cool, then spoon into jars and store in the refrigerator for up to 1 month, or freeze for up to 1 year.

How long will homemade apple butter last? ›

It will keep in your refrigerator for up to 3 months, or in the freezer for up to one year.

These components contribute to a healthy digestive system, support immune function, and promote overall well-being.

Why does apple butter turn brown? ›

During the slow cooking, the sugars that are naturally present in the apples caramelize into a deep, molasses-like flavor, and a dark color. This gives the apple butter its rich, sweet flavor and dark brown hue.

Is it OK to eat 2 apples a day? ›

Eating two apples a day is good for heart health. You can eat any kind of apple, as long as you eat the peel. Apple peels contain many antioxidants that help fight cancer. Researchers suggest that it is best to get antioxidants from fruits and vegetables rather than from dietary supplements.

What is the point of apple butter? ›

Apple butter and apple sauce also have different uses. Popular ways of using apple butter include, condiment or spreads for pastries and pie fillings. It can also be used as a healthier alternative for oil, shortening, or butter.

Why is apple butter so good? ›

Apple butter is the richer, prettier, and perhaps more sophisticated sister to plain-Jane applesauce. It's truly the embodiment of fall, with colorful crisp apples cooked down and caramelized in spices, brown sugar and vanilla.

Why isn't my apple butter thick? ›

The longer you cook it, the thicker it will be. Apple butter is high in natural sugar so if you want don't want to add sugar, then use sweet apples. The thing about sugar is that helps thicken your apple butter. I used about 5 tablespoons of coconut sugar so my apple butter was satisfyingly sweet.

What if my apple butter is too thin? ›

Leave the crock of apple butter uncovered, and continue to cook on LOW heat for another hour or so before giving it another stir. The apple butter will be fairly thick, but still run off the spoon–like the texture of commercial apple sauce. Don't worry, the apple butter will thicken as it cools.

Why did my apple butter not thicken? ›

If it's runny it just hasn't been cooked long enough. It's not a safety issue, but again, it'd be more like a spiced applesauce.

How do you know when fruit butter is done? ›

Press fruit through a colander, food mill, or strainer. Cook fruit pulp with sugar and spices, stirring frequently. To test for doneness, remove a spoonful and hold it away from steam for 2 minutes. It is done if the butter remains mounded on the spoon.
